CARAMEL APPLE POKE CAKE

Poke cakes make for a super easy and delish dessert. We normally make poke cakes in the summer, our Boston Cream Poke Cake has been a huge hit. Since I had a few cake mixes and apple pie filling on hand, a poke cake was in order. I spotted some easy Pillsbury Caramel frosting at Target while school shopping last week. I knew it would make for a perfect frosting on top of this apple yumminess.

Prickly Pear Jelly has a unique flavor I wouldn't begin to know how to describe, but it's good. My neighbor has a nice crop of tunas this year and I decided to try my hand at making jelly. Doesn’t that look DELICIOUS? You have no idea how good it was with our homegrown tomatoes! This sandwich came about as a mash-up of mine and Luke’s ideas for Sunday breakfast. I had a can of Trader Joe’s Buttermilk Biscuits (which I love) that I had planned on fixing with some eggs and such. But, we had so many tomatoes from the garden that Luke thought maybe it would be nice to have a BLT for breakfast…it was after 10:30…

We have 4 goats. Three Nigerian Dwarves and 1 Spanish Boer. The Boer is a show goat my daughter *was* going to show at this year's fair.
